These quick, clever and delicious recipes are for anyone who wants to eat nutritious food made from scratch that fits around their busy lives. Now, I just feel like my mum must have felt so isolated - my dad was at work, and she was doing her medical exams.I often am tempted to just use ready-meals, so the ease of these has made me cook 'properly' more often. The Round the World one might be interesting, but I quite like the flavours and combinations she put together in the recipes on the BBC site, which I think are vaguely Persian - lots of pomegranate and things like that - so maybe one of the first ones would be better. I was drawn to the Rainbow Tabbouleh with Avocado, Radishes and Pomegranate, to the Mediterranean Courgettes with Olives, Feta and Tomatoes, to the Beetroot, Chick Pea and Coconut curry - a ruby beauty! This filling gratin, with its crisp feta topping, is perfect comfort food – the dining equivalent of sitting cosily on the sofa under a blanket. Everyone will feed you more than a full meal, be really offended if you don't eat right, then try and feed you more.
