About this deal

After the taste comes the bottle design, which is inspired by the traditional Mallorcan tiles, known as ‘suelo hidraulico’. This was the key inspiration and starting point in creating the stunning tile design, which took over a year to complete and is printed with organic paint directly onto the bottle using a specialised process, resulting in an eco-friendly and recyclable product. Alex: Of course the 'Gin Wave' has hit Spain as well and many new brands have come to market in recent years. Spain is now reported to have the highest overall gin consumption in Europe. After maceration the distillation commences, passing the vapours through an infusion basket containing the more delicate botanicals, including Wild Almond Flowers, Lavender, Orange Leaves, Lime Zest and Tomato Branches. The combination results in a lightly floral and citrus gin with a smooth earthy finish. A true taste of Mallorca. We always love to try new gins but some favourites have been Harahorn Gin, Seppeltsfield Road Barossa Shiraz and Spirit of Hven Navy Strength. The unique core flavour comes from the Mallorcan juniper berries capturing the subtle essence of the Mediterranean Sea. Almond flowers, foraged once a year before spring, combined with orange leaves and lavender, create a delicate floral scent and sweetness. These core ingredients really enhance the depth of flavours from the other botanicals we use.

We are a small craft distillery (approximately 200 sqm) with a Spanish 500 litre copper pot still located in the industrial heart of Palma de Mallorca. The company logo is inspired by the rose window in La Seu Cathedral, one of the most iconic spots in Palma. We are looking into making a spirit with the local grape varieties of Mallorca, and we are also looking at creating some Gin & Vodka truffles with a local artisan chocolatier and working on a coffee spirit with a local artisan coffee roasting company. We're also excited to announce that all our products are now certified Organic, so we are officially with first Organic certified distillery in Mallorca. Palma takes inspiration from the traditional and historical aspects of spirit production while incorporating modern techniques and standards to ensure a premium and consistent quality across their product line. The team carefully selects, processes, and distils the ingredients, diligently overseeing each step of the production process. Byron:Spain has a rich history when it comes to the production of alcoholic beverages, and this is not just limited to wine. Distilling is likely to have been carried out on the Iberian Peninsula since the arrival of the Moors over 1,000 years ago. Although historically, the focus of spirits production in Spain has been in derivatives of wine or grape distillates, such as Brandy and Orujo, local distilling expertise has translated well to the production of Gin.

In June 2015 we decided to sell the restaurant and move to the beautiful island of Mallorca to settle down and start a family with our now 1 year old daughter Amelia. It was in Edinburgh that we saw the rise of the craft distilling revolution first hand, with the launch of local products such as Edinburgh Gin and The Botanist, and as soon as we arrived in Palma we knew that there was a real market for quality artisan spirits that would truly represent what Mallorca has to offer. Both originally from Newcastle, we have had quite the journey so far, from working on luxury super yachts around the world, to opening and selling an award winning bar-restaurant in the centre of Edinburgh. We have now focused our attention on recently opening Palma’s first craft distillery creating premium products made from the island, for the island. We caught up with Alex von Eisenhart Rothe, Co-Founder of LAW Gin in Ibiza, and Byron Holland, Co-Founder of Mallorca Distillery and Palma Gin, to find out what makes Spanish Gin special and how the industry has grown in recent years: Byron:Gin Distillers is Spain are spoilt for choice when it comes to the availability of local botanicals and base alcohols. Citrus fruits are available in abundance all over Spain and as a result, many offerings focus on showcasing the nuances in aroma of varieties local to producer. In additional to citrus, many Spanish Gins make use of local wildflowers and herbs, adding complexity and variety to the Gins distilled in Spain. We like to show off the richness in flavour of the Mallorquin Orange Peel, Lavender and Almond Blossom in our Palma Gin, all grown within 15km of the Distillery.

THE PERFECT WINTER GIN

One of the key products of the Palma range is their gin, celebrated for its smoothness, flavour complexity and the genuine reflection of Mallorcan botanicals. The brand places emphasis on producing spirits that are not just consumable products but also a representation of the location from which they originate, sharing a piece of Mallorca with every pour. Through this, Palma successfully introduces drinkers to the vibrant nature of the island authentically and enjoyably. Byron:In terms of production, the Spanish Gin Industry, has developed significantly in the past 10 years. There has been notable increase in the number of smaller craft producers throughout Spain, challenging the bigger traditional regional distilleries in terms of variety and quality in offerings. As a result, these larger producers have also revived and modernised their range of Gins.
