In fact I'm going out Monday morning to get some more Sevilles and make another batch because this first lot won't last long - I've got a marmalade cake lined up. The marmalade will keep for up to 1 year in a cool, dark place, and for up to a month in the fridge once opened. Excellent stuff for making small batches of marmalade rather than a whole mountain of it when the Seville oranges are in season. and finally, and most importantly, you need seville oranges, unwaxed lemons and sugar in the following quantities.

Put the whole oranges and lemon juice in a large preserving pan and cover with 2 litres/4 pints water - if it does not cover the fruit, use a smaller pan. The original recipe states preserving sugar but this is now so hard to get and twice as expensive as granulated so I would (and did) use that. The fruit can also be used as a base to add with other fruit for example 1kg of Limes finely sliced with peel and and additional 1kg of sugar it doesnt need to be jam sugar and a very nice Lemon Lime Marmalade will be made which will also set.Bring to the boil, cover and simmer very gently for around 2 hours, or until the peel can be easily pierced with a fork. Instead of hours of slicing, juicing and stirring it takes just over an hour to make 7-8 pots of delicious marmalade.
